- 1 box yellow cake mix (about 15.25 oz)
- 1/2 cup unsalted butter, melted
- 1 cup water
- 2 large eggs, room temperature
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 large egg, room temperature
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar
- 1 tbsp lemon juice
Instructions
- Preheat your oven to 350Β°F (175Β°C).
- In a medium bowl, combine the sliced strawberries, 1/4 cup of sugar, and lemon juice. Mix gently and set aside.
- In a large mixing bowl, combine the yellow cake mix, melted butter, water, and eggs. Beat on medium speed until well combined and smooth, about 2 minutes.
- In another bowl, beat the softened cream cheese with 1/2 cup of sugar and vanilla extract until creamy and smooth. Add the egg and mix until fully incorporated.
- Pour half of the cake batter into the greased baking dish. Spread it evenly with a spatula. Add the cheesecake layer on top, spreading it carefully to cover the cake batter.
- Spoon the prepared strawberries evenly over the cheesecake layer.
- Pour the remaining cake batter over the strawberries and cheesecake, spreading it gently to cover.
- Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Once baked, remove from the oven and let it cool for about 15 minutes before serving.
Notes
For a gluten-free option, use gluten-free cake mix. Serve warm with whipped cream or vanilla ice cream.
