  • 1 box yellow cake mix (about 15.25 oz)
  • 1/2 cup unsalted butter, melted
  • 1 cup water
  • 2 large eggs, room temperature
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 large egg, room temperature
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice

Instructions

  1. Preheat your oven to 350Β°F (175Β°C).
  2. In a medium bowl, combine the sliced strawberries, 1/4 cup of sugar, and lemon juice. Mix gently and set aside.
  3. In a large mixing bowl, combine the yellow cake mix, melted butter, water, and eggs. Beat on medium speed until well combined and smooth, about 2 minutes.
  4. In another bowl, beat the softened cream cheese with 1/2 cup of sugar and vanilla extract until creamy and smooth. Add the egg and mix until fully incorporated.
  5. Pour half of the cake batter into the greased baking dish. Spread it evenly with a spatula. Add the cheesecake layer on top, spreading it carefully to cover the cake batter.
  6. Spoon the prepared strawberries evenly over the cheesecake layer.
  7. Pour the remaining cake batter over the strawberries and cheesecake, spreading it gently to cover.
  8. Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  9. Once baked, remove from the oven and let it cool for about 15 minutes before serving.

Notes
