- 1 cup pumpkin puree
- 1 cup protein powder
- 1 cup rolled oats
- 2 large eggs
- 1/2 cup maple syrup
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the pumpkin puree, eggs, and maple syrup. Whisk until smooth.
- In another bowl, mix the oats, protein powder, baking powder, cinnamon, nutmeg, and salt together.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix!
- If you’re using chocolate chips, fold them in gently at this stage.
- Line your muffin tin with parchment liners or grease it lightly with cooking spray.
- Using a spoon or ice cream scoop, fill each muffin cup about 3/4 full with batter.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
Notes
These muffins can be customized with nuts or different spices. They store well and can be frozen for later enjoyment.
