These peach pie cruffins combine the best of a muffin and a croissant into one irresistible dessert, filled with sweet, juicy peaches and topped with cinnamon sugar. Perfect for summer gatherings or a cozy brunch!

- 2 cups all-purpose flour (plus extra for dusting)
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 cup unsalted butter, cold and cubed
- 1/4 cup ice water
- 3 cups fresh peaches, peeled and diced
- 1/4 cup brown sugar
- 1 tablespoon cornstarch
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
- 2 tablespoons sugar (for sprinkling)
- 1 teaspoon cinnamon (for topping)
Instructions
- In a mixing bowl, combine the flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add the ice water, mixing until just combined. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- In another bowl, mix the diced peaches, brown sugar, cornstarch, cinnamon, and lemon juice. Set aside.
- Once the dough has chilled, turn it out onto a floured surface. Roll it into a rectangle about 1/4 inch thick.
- Fold the dough into thirds, like a letter, and roll it out again into a rectangle. Repeat this folding and rolling process 2-3 times.
- Cut the dough into squares. Place a tablespoon of the peach filling in the center of each square. Fold the corners over the filling to create a pocket.
- Preheat your oven to 375Β°F (190Β°C).
- Grease your muffin tin and place each cruffin seam-side down into the cups.
- In a small bowl, mix the sugar and cinnamon. Brush the tops of the cruffins with melted butter, then sprinkle the cinnamon-sugar mixture over them.
- Bake for 18-20 minutes, or until golden brown and flaky.
- Allow the cruffins to cool for a few minutes in the pan before transferring them to a wire rack. Serve warm.
Notes
Use fresh, ripe peaches for the best flavor. If using frozen peaches, thaw and drain them first.
