This delicious sourdough discard coffeecake is a comforting, moist cake that pairs perfectly with your morning coffee or tea. It’s quick, easy, and uses simple ingredients you likely already have in your pantry.

- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup sourdough starter, fed or unfed
- ½ cup milk
- ½ cup unsalted butter, melted and cooled
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- ½ cup brown sugar
- 1 tablespoon ground cinnamon
- ½ cup chopped nuts (optional, pecans or walnuts work great)
Instructions
- Preheat your oven to 350°F (175°C). Grease your cake pan with butter or non-stick spray, and line the bottom with parchment paper if desired.
- In a mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until well combined.
- In another bowl, mix the sourdough starter, milk, melted butter, eggs, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Don’t overmix; it’s okay if there are a few lumps!
- In a separate bowl, combine the brown sugar, cinnamon, and chopped nuts for the topping. Mix well.
- Pour half of the batter into the prepared pan, then sprinkle half of the topping mixture over the batter.
- Pour the remaining batter on top and finish with the rest of the topping mixture.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the coffeecake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
