- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 cup granulated sugar
- 1 cup pumpkin puree (not pumpkin pie filling)
- 2 large eggs, room temperature
- 3 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground ginger
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- ½ cup white chocolate chips or chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
- In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 3-4 minutes.
- Add the pumpkin puree, eggs, and vanilla extract to the mixture, and continue mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, spices, and salt until evenly mixed.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. If desired, fold in white chocolate chips or nuts at this stage.
- Using a cookie scoop or tablespoon, drop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until the edges are lightly golden and the centers look set but soft. Don’t overbake!
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely.
Notes
For best flavor, use high-quality pumpkin puree. You can also chill the dough for 30 minutes to enhance flavor and prevent spreading.
