Description

These Chocolate Chip Cookie Butter Bars combine rich, buttery flavor with gooey chocolate chips, making them an irresistible treat perfect for any occasion.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 cup cookie butter
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Line your 9×13-inch baking pan with parchment paper, leaving some overhang for easy removal later.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer until light and fluffy. This should take about 2-3 minutes.
  3. Add the cookie butter to the mixture and beat until well combined.
  4. Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips with a rubber spatula, ensuring they’re evenly distributed throughout the batter.
  7. Pour the batter into the prepared baking pan, spreading it evenly with your spatula. Tap the pan gently on the counter to remove any air bubbles.
  8. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  9. Once baked, remove the pan from the oven and let it cool in the pan for about 10 minutes. Then, lift the bars out using the parchment paper and cool completely on a wire rack.
  10. Once cooled, cut into squares or bars and enjoy!

Notes

Ensure your butter and eggs are at room temperature for best mixing. Don’t overmix once you add the flour.
