Description

These Soft Cinnamon Roll Cookies deliver the classic cinnamon roll flavor in a sweet, portable package. They’re soft, buttery, and utterly irresistible, perfect for any occasion.

Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • ½ cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • ¼ cup unsalted butter, softened
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes. Add the egg and vanilla extract, mixing until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Don’t overmix; you want that soft texture!
  5. In another bowl, mix the brown sugar, cinnamon, and softened butter until it forms a paste.
  6. Using a tablespoon, scoop out portions of the cookie dough and flatten them slightly in your palm. Place a small dollop of the cinnamon filling in the center, then fold the dough over and roll it back into a ball.
  7. Place the cookies on the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, until the edges are lightly golden. The centers may look a bit underbaked, but they will set as they cool.
  8. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a cooling rack.
  9. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled cookies.

Notes

For best flavor, use high-quality butter and ensure eggs are at room temperature. You can substitute all-purpose flour with a gluten-free blend if needed.
