Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes. Add the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Don’t overmix; you want that soft texture!
- In another bowl, mix the brown sugar, cinnamon, and softened butter until it forms a paste.
- Using a tablespoon, scoop out portions of the cookie dough and flatten them slightly in your palm. Place a small dollop of the cinnamon filling in the center, then fold the dough over and roll it back into a ball.
- Place the cookies on the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, until the edges are lightly golden. The centers may look a bit underbaked, but they will set as they cool.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a cooling rack.
- In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled cookies.
