Instructions
- In a mixing bowl, combine the flour, granulated sugar, melted butter, angel food cake mix, eggs, vanilla extract, and baking powder. Use an electric mixer to blend until smooth.
- In a deep frying pan or Dutch oven, pour in enough vegetable oil to reach about 2 inches deep. Heat the oil over medium heat until it reaches 350°F (175°C).
- Using a cookie scoop or tablespoon, carefully drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan.
- Fry the churro bites for about 2-3 minutes on each side, or until golden brown. Use a slotted spoon to remove them and place them on a cooling rack.
- In a shallow bowl, mix together the sugar and cinnamon.
- While the bites are still warm, roll them in the cinnamon-sugar mixture until well coated.
