I’m Charlotte Bennett, 27, originally from London, now living in Austin, Texas. I stumbled into cooking after university, when burnt toast and frozen pizza just didn’t cut it anymore. I started experimenting out of necessity, and to my surprise, I fell in love with the process.

My Story

There’s something grounding about chopping vegetables, about stirring a sauce while music plays softly in the background. What started as a practical necessity quickly became my favorite form of therapy. Moving from London to Austin opened my eyes to new flavors and techniques, but my heart still craves the comfort foods that remind me of home—just with a few Texas twists along the way.

My cooking journey has been full of trial and error—a pie that overflowed all over the oven, a stew that turned out more like soup, and countless attempts at the perfect roast (I’m still working on that one!). But through it all, I discovered that cooking is about embracing imperfection. Some of my favorite memories are of the disasters that somehow turned into delicious accidents.

I love creating hearty meals that feel like hugs: mushroom wellingtons that impress but aren’t intimidating, creamy mashed potatoes that remind you of childhood, and apple crisps with just the right crunch. My Austin kitchen has become a testing ground for comfort food experiments, where British classics meet Texas-sized portions and flavors.

I love how Austin embraces both creativity and authenticity—it’s the perfect place for a Londoner who fell in love with comfort food. My tiny apartment kitchen has become surprisingly versatile, proving that you don’t need loads of space to create something wonderful.
